Discover Alpine cornmeal polenta with a cheesy egg sauce! | Pasta Grannies

The Winter Olympics Committee of Milano Cortina 2026 has asked Pasta Grannies to help them promote the gastronomic traditions of the Val di Fiemme region where several of the competitions are taking place. I loved the idea! .So here is Elena, the first signora in a series of amazing pasta grannies we'll be featuring over the next few months, making a comforting winter dish called Polenta with Zin Zin. Here's her recipe:

For the polenta
200g polenta
800ml water
salt

For the sauce (Zin Zin):
She uses three types of local cheeses:
50g Fontal di Cavalese
50g Gradevole di Predazzo
50g Val di Fiemme di malga
2 eggs


For the sauerkraut:
1 onion
40g butter
200g sauerkraut
70g pancetta
some juniper berries
2 bay leaves
50ml vegetable stock
