My First Overnight Smoked Brisket What Went Wrong?

This is my first overnight smoked brisket on a pellet grill… I’ve smoked many briskets in the past, but never done an overnight cook, so I learned some lessons and there were definitely some things that I would do differently next time.

This overnight brisket turned out okay - the brisket point was perfect, but the flat dried out a bit on me… It could have been because the brisket was already trimmed and on the leaner side when I got it from the grocery store, or it could have been because I turned the pellet grill temp down a bit lower during the overnight hours to get some extra sleep.

Overall, I learned some lessons from this first overnight cook on the pellet smoker. Can’t wait to do my next smoked brisket overnight and put what I learned to the test!
