Stuffed Cabbage Rolls (Gołąbki)

Ingredients:
• 0.5 kg minced pork
• 0.75 kg minced beef
• 1 cup rice, 2 cups water
• 2 savoy cabbages
• 1 onion
• 0.7 litres passata
• 0.5 litres broth
• Seasonings: salt, pepper, sweet paprika, chili, bay leaf

Instructions:
1. Prepare the rice:
1. Dice the onion and sauté until translucent.
2. Add the rice to the onion, fry briefly, then pour in 2 cups of water. Cook until the rice is fully cooked. Set aside to cool.
2. Prepare the cabbage:
1. Cut out the core from each cabbage.
2. Place the cabbage heads in a large pot of boiling water and blanch for about 5-7 minutes.
3. Remove the cabbage from the water and let it cool.
3. Make the filling:
1. Mix the cooked rice with the minced pork and beef.
2. Add salt, pepper, sweet paprika, and chili to taste. Combine well.
4. Prepare the cabbage leaves:
1. Carefully separate the cabbage leaves.
2. Trim the thick stem from the centre of each leaf to make them easier to roll.
3. Place a portion of the meat mixture on each leaf.
4. Roll like a croquette: fold the bottom of the leaf over the meat, tuck in the sides, and roll tightly to seal.
5. Make the sauce:
1. Mix the broth with the passata.
2. Add a bay leaf to the sauce for extra flavour.
6. Assemble the dish:
1. Layer the cabbage rolls in an ovenproof dish.
2. Pour the sauce over the rolls and ensure they are covered.
3. Use leftover cabbage leaves to cover the top.
7. Bake:
1. Cover the dish and bake in a preheated oven at 180°C (356°F) for 2 hours.
