This video from Richard and Ian show you how to reduce the pressure on your oven by cooking some or all of your Christmas dinner on your BBQ which probably otherwise won't be used over the winter. Peel some Maris Piper potatoes and cut into chunks then place in some cold, salted water in the Weber GBS (Gourmet Barbecue System) wok. Pre-heat the BBQ to about 230C and boil over direct heat for about 20 minutes, drain when the potatoes still have a little bite to them, don't leave them until they are soft all the way through. Shake them around a little to roughen the edges, which will give them those nice crispy edges. Place a tray over the direct heat and add some vegetable oil, once this is hot add the potatoes and baste with the fat, add some cloves of garlic and sprigs of rosemary. Move the tray over the area of indirect heat to cook through, close the lid and leave for about 20 minutes, then come back and turn over. Leave for another 20 minutes and check again. Remove from the BBQ and take the potatoes out of the fat.
