Hello,

in this video I am cooking two different kinds of german dumplings.
Bread dumplings from southern Germany - Semmelknödel, and meat dumplings from northern Germany - Königsberger Klopse.
I am making a vegetarian option with a meat substitute.

These are the full recipes:

Bread dumplings/Semmelknödel with mushroom cream sauce
4 bread rolls (250 g)
1 onion
400 ml milk
1 egg
200 ml heavy cream
parsley
400 g mushrooms
salt, pepper, optional: veggie broth powder

Dumplings:
Cut bread in fine slices. Saute 1/2 diced onion, add 200 ml of milk. Soak bread in warm milk mixture. Season with salt, pepper, parsley, optional veggie broth powder. When cooled down a bit, add 1 egg and knead the dough. Form tennis ball sized dumplings.
Bring enough salted water to a simmer to submerge the dumplings. Let them simmer for 20 minutes, don´t cook the water or the dumplings will fall apart.

Sauce:
Saute 1/2 onion slices, add and fry sliced up mushrooms. When golden brown, add 200 ml of milk and 200 ml of cream. Season with salt, pepper, parsley and optional veggie broth powder.

Meat dumplings/Könisgberger Klopse with caper cream sauce:
1 bread roll
1/2 onion
300 ml milk
1 egg
275 g mince/mince substitute
200 ml heavy cream
1 jar capers
herbs
salt, pepper, optional: veggie broth powder
flour

Cut bread in fine slices. Saute 1/2 diced onion, add 100 ml of milk. Soak bread in warm milk mixture. Season with salt, pepper, optional veggie broth powder. When cooled down a bit, add 1 egg and the mince and knead the dough. Form golf ball sized dumplings.
Fry the dumplings, then add 200 ml milk and 200 ml cream. Add the liquid of the jar of capers (at least 2 tablespoons, to taste). Season with salt, pepper, opional veggie broth powder and herbs. Cook for at least 5 minutes.
Mix 1 tablespoon of white flour with 2 tablespoons of cold water for a slurry, add to the boiling sauce and stir in to thicken up the sauce.
As a side dish cook some rice. Serve with capers on top.
