What do you do if you have leftover rice and kimchi in your refrigerator? Turn them into delicious and healthy KIMCHI BOKKEUMBAP or simply known as KIMCHI FRIED RICE. This Korean dish is bursting with flavors. You will love the combined sweet, salty, sour and spicy flavors. My version has no meat so it’s safe to say it’s a vegan dish EXCEPT for the fried egg. And here are my ingredients for four servings of my delicious KIMCHI BOKKEUM BAP:

5 cups COOKED RICE
1 cup or pack of KIMCHI
1 tablespoon SALT
1 tablespoon GOCHU JANG
1 tablespoon SESAME OIL
2 tablespoons OLIVE OIL
1 whole GARLIC
1 medium size ONION
1 stem LEEKS
3 tablespoons ROASTED SESAME SEEDS
4 fried EGGS
