Ever since I started living low carb more than 4 years ago, I have been consuming konjac or shirataki rice and noodles on a daily basis. Frankly, they are my life saver as you know being Asians, we can't live without rice and noodles. And we have abundant hawker stalls here, so we are blessed with delicious local hawker foods. Most of the time, I bring along my konjac rice or noodles to everywhere I go and just request the vendors to replace with the regular rice and noodles, so I never felt deprived of my favorite food. I have even brought them along on my overseas trips so I could enjoy the local food there and still stay low carb.

In this video, I featured the konjac ready-to-eat spaghetti from Miraclenoodle but of course, you can use any konjac or shirataki noodles. You can even use konjac rice instead of noodles for this dish.

Konjac rice and noodles are made from the Japanese Konjac plant, which has been consumed in Japan for over 1,000 years. These low-carb pasta and rice contain 97 percent water and 3 percent fiber, which means they're virtually calorie-free. The best part? All of them are soy-free, gluten-free, vegan and non-GMO, so you'll feel good about every bite!

The texture of these konjac rice and noodles are chewier than regular ones. I would say they are close to glass noodles. They are bland so will take after any flavors that they are cooked with. They key is in how they are cooked. The longer they are soaked in the sauce, the softer they become. Also, it's important to dry roast them in a pan without oil to remove excess water particularly for dry dishes such as stir fries, lo mein (tossed noodles) or pasta. If you are using them for soups, then this step is not necessary. You may find it a little too chewy at the beginning, but you can get used to it. In my opinion, the fact that we can still enjoy our rice and noodle dishes and still lose weight or stay low carb will outweigh the texture of the noodles.

This stir-fried noodle is so easy to whip up using leftover ingredients from my fridge and freezer. It only takes 5 minutes to cook yet it is so tasty, delicious and I just love the vibrant colors. If you are small eaters, you can get 3 to 4 servings or 2 servings generally.

INGREDIENTS
Miracle Ready-To-Eat Spaghetti = 2 packets (400 g) (You can also use any konjac or shirataki noodles)
Leftover roast & bbq pork (cubed) = 1 cup
Medium shrimps = 1 cup (deveined with tail intact)
Cabbage (shredded) = 2 cups
Carrot (strips) = 1 cup
Minced garlic = 2 to 3 tbsp
Spring onions (cut lengthwise) = 1/2 cup
Fresh red chilies = 1 small (optional)
Soy sauce, tamari or liquid aminos = 2 to 4 tbsp
Fish sauce = 2 to 3 tbsp (Optional. You can replace with salt to taste)
White pepper = 1 tsp
Coconut oil = 30 to 50 ml (You can also use any keto friendly oil)
Sesame oil = 1 tbsp

DIRECTIONS
1. Drain the noodles. Pan fry the noodles without oil until squeaky to remove excess water. This is an important step so that the noodles will not be watery and able to absorb the sauce well. Set aside.
2. In a pan, stir fry the minced garlic with oil until fragrant.
3. Add the cubed meat and cook for a while. Then add the shrimps and cook for a while.
4. Add the noodles, seasonings and mix well.
5. Add the cabbage, carrots and mix well. Taste and adjust accordingly.
6. Add the spring onions, chilies and stir fry for a while.
7. Turn off the heat.
8. Drizzle with the sesame oil then mix to combine.
9. Transfer to a plate and serve warm.
