Fish and Chips Recipe (Using Club Soda) - Inspired by Bethany T.'s recipe found here:

*We used 1 1/2 lbs cod - fresh
1 1/2 cups flour
1/2 cup corn starch
1 teaspoon baking powder
16 oz club soda (We used roughly 8 oz.)
1 teaspoon salt
3 tbs. peanut oil (vegetable, olive, or any other of your choice will work as well)
Usual suspects seasoning (see below for Usual Suspects Recipe!) - used liberally

Mix together 1 cup flour, 1/4 cup cornstarch, baking powder and salt in a bowl.
Stir in enough club soda to make a batter about the consistency of thin pancake batter.
Season the batter to taste with Usual Suspects (or seasoning of your choice).
Set aside.
In another bowl, mix together remaining 1/4 cup flour and 1/4 cup cornstarch.
Heat griddle to med/low heat (roughly 410-420 degrees), place approx. 3 tbs of oil on griddle and let heat up for 3-5 minutes. You want to create a "shallow fry" by keeping oil in one area on the griddle.
Cut fish to desired sizes.
Dredge the fish in the dry flour/cornstarch mixture. Shake off any excess.
Dip dredged fish into batter allowing any excess to drip off before carefully adding the fish to the hot griddle top.
Cook the fish until golden brown.
Drain on paper towels or cooling rack.

For fries (Chips)
2 large potatoes
Peanut Oil
Salt and Pepper

Cut potatoes into strips (french fry cut). Boil water in med/large sauce pan and place potatoes in the water. Let boil for 5 minutes and remove from the heat. Place potatoes immediately in a bowl filled with ice water to stop the cooking process.
Turn griddle to med/high heat and pour oil in one area of the griddle to create shallow fry. After 5 minutes, place potatoes in the oil and cook, constantly turning potatoes until they are golden brown. Pull from griddle and place on cooling rack on griddle away from heat (to allow to keep warm/continue cooking) and place a dome over the fries. Once they are all hot and to the desired crispiness, pull from the griddle and let cool enough to eat. Enjoy!

Usual Suspects Seasoning: *This is for our shaker - makes approx. 8 oz.
1tbs salt
3/4 tbs pepper
1/2 tbs onion powder
1 tbs garlic powder
1/2 tbs Adobo
1 tbs accent.
Use liberally/ to taste
