A delicious brothy vegetable favourite. And a worthy dish to make for that reunion dinner for CNY.

This is another restaurant dish we eat quite often when we are out, yet it can be also easily replicated at home. The key is the superior chicken stock which you can make using chicken bones and jin hua ham using a slow cooker, cooking for 10 hours.

Boil one salted egg for at least 10 minutes to get it fully cooked. Then cut it into small chunks. Similarly, cut a century egg into chunks as well.

In a wok with some oil, fry 2 cloves of minced garlic and a handful of pre soaked dried scallops until fragrant. Then add the stems of a packet of Chinese spinach.

Pour in a litre of the chicken stock and let it simmer for a few minutes. Season with 1/2 tsp of salt. Then add in the chopped salted egg and century egg. Followed by the rest of the spinach leaves.

Add a dash of white pepper and 1 tsp of Chinese wine. Add some goji berries. Then finally, slowly add in 2 beaten eggs and immediately stir. Once the eggs are cooked, the dish is down.

Simply serve into a bowl and enjoy this restaurant classic with a bowl of rice and other dishes.
