Mutton biryani is a rice dish that is a combination of some generously spiced meat and rice. It is a popular dish in Muslim households, especially during Eid celebrations. The dish consists of marinated and aromatic mutton or goat meat paired with saffron-milk-infused rice. Other ingredients include onions, tomatoes, spices, herbs and rose water.

Recipe for Mutton Biryani

Ingredients:

For Mutton Curry:

1 kg mutton with bones.

3 medium onion finely chopped

1 cup oil or ghee
4 tablespoons ginger garlic paste
2 tbs biryani masala
1 cup plain yogurt
¼ cup chopped cilantro
¼ cup chopped fresh mint
2 tsp red chilli powder
Salt to taste
Turmeric half tsp
Jawatri one piece
Tamarind 2 tbs
5 cloves
4 green cardamom
1 star annace
2 bay leaves


For Rice:


1 kg Basmati rice soaked in water for 1 hour
2 liters water for boiling


1 cinnamon stick
2-3 green cardamom pods
2 cloves
1 green chili
⅛ teaspoon food coloring


Instructions:

1. Cook mutton, or lamb for biryani in a pot or cooker or an Instant pot on high pressure for 45 minutes.
Heat oil on medium-high heat. Add chopped onion and cook until soften.
Add mutton fry till colour changes add garlic ginger cook then add all spices and add tgree to four cups of water untill meat gets tender. Add yoghurt and cook till oul get separated. Put aside and prepare rice. curry and cook until curry thickens up.

Cook rice on medium-high heat for 6-8 minutes or until al-dente. Strain the rice in a large colander and drain all the water. Set the rice aside.
Layer the rice and curry in two to three steps
Heat Tava on medium heat. Place the Pot on Tava to diffuse the heat. Turn the heat down to low. Steam for 20-25 minutes. Turn off the heat and let the biryani rest for 8-10 minutes.
9. To serve, slide the spatula on one side of the pot and gently bring the rice and vegetables to the top. Remove the Biryani gently on a platter. Serve hot with whipped plain yogurt or raita.
