A good buttery egg tart is all about the crispy crust and silky smooth custard filling.

We take you through the secret technique step by step and then show you how to roll out the dough, make the custard filling, transfer it to a tart mold, and bake it.

Crust ingredients
40g sugar powder, sifted
114g butter, soften
1 large beaten egg
10g milk powder, sifted
195g cake flour, sifted

Custard filling ingredients
270g eggs
257g water
153g sugar
45g evaporated milk

*31g for regular size tart mold or Aluminium Tart Moulds Diameter (7.5 Cm) Height (2.5 Cm)

Makes about 16 tarts

Bake the tarts in 375°F for about 20 minutes.
