Almond Financiers, a tasty french classic. It's so straight forward, to make your life easier the only equipment you will need is a food processor. If you have any leftover egg white for any reason, financiers are a great way to use them up.

Financier batter ( 8 inch - 1 inch cake pan )

120g ground almonds
50g plain flour
2g baking powder
120g icing sugar
2 tsp honey
1tsp vanilla extract/ vanilla bean paste
150g egg whites
130g butter

First cook the butter over medium heat, once fully melted continue to cook the butter it will start to create a load of bubbles on the surface and if you listen carefully it will be singing to you, once the singing stops and the bubbles disperse, remove from the heat immediately otherwise the butter will burn and taste bitter. Now in a food processor blend together the almonds, sugar, flour & baking powder until nicely incorporated. Then add in the honey, vanilla and the egg whites, blend again until smooth. Now add in the butter and pulse to combine, batter done. Grease and coat the cake pan with butter and ground almonds, tapping off the excess. Pour the batter in, bake at 180C for 25 -30 mins, then let cool and dig in, enjoy!!
