Which is the best green tea for me? We have the answer for you! Long Jing and Biluochun are the two most famous green teas and have a very different taste profile. In this video, we taste and describe them, so that you can better understand which is the best green tea for you.

Why two very different green teas? First of all, one is a sweet green tea and the other one a bitter green tea. Sweet green tea is very rare, and usually delicious, but bitter green tea can be pleasant too—as long as it's intentionally bitter. Otherwise, poor storage or harvesting techniques may be to blame.

For comparison, Gabriele tastes two pretty well-known Chinese green teas, Long Jing and Biluochun, and examines their origins, cultivation, processing, brewing techniques, and, of course, taste.

Long Jing, also known by the translation 'Dragonwell', is a very famous Chinese green tea, maybe the most famous, and is named after its village of origin in the Zhejiang province, near Hangzhou, though Long Jing style tea is now produced throughout a much wider range. The leaves are pressed firmly while being roasted in a wok, giving them a flattened appearance and a pleasant roasted flavour with a distinctive chestnut note.

Biluochun, literally 'green snail spring', probably from the curled appearance of the leaves, comes from Suzhou, in Jiangsu province. The fresh leaves, frequently still with plenty of little white hairs, are also wok-roasted, and are kneaded like bread dough and rolled like meatballs, among other techniques, to give them their distinctive snail-like shape. While the tea liquor can get bitter, with proper steeping (not too long or hot), it releases delicate, fruity notes.
