(Please scroll down for English Description) 一講話整燒鴨,好多朋友問點搞呀?好難搞喎!我未試過呀,今次試吓,工序係幾多,但搞到喎,仲幾成功添,屋企有部夠大嘅焗爐就做到!

材料:
鴨1隻
葱3條
薑5片
蒜頭4粒

乾醃料:
花椒3g
八角2g
丁香2g
肉桂粉2g
豆蔻粉1g
鹽15g
糖5g
黑胡椒2g

濕醃料:
南乳醬1湯匙
甜醬1大茶匙
柱侯醬1大茶匙
蠔油1茶匙
紹酒1茶匙
老抽1茶匙
生抽1茶匙
糖2茶匙

脆皮水:
浙醋3湯匙
米醋4湯匙
米酒2湯匙
麥芽糖1大茶匙

When my friends heard that I wanted to try making Cantonese BBQ duck, their responses were "it is difficult, how to make it?" I had not tried before and this was the first time trying. It really had a lot of steps but it was achievable and the result was really successful. You just need a big enough oven then you can also make it.

Ingredients :
Duck 1 piece
Spring Onion 3 pieces
Ginger 5 slices
Garlic 4 cloves

Dry Seasoning:
Sichuan Peppercorn 3g
Star Anise 2g
Cloves 2g
Cinnamon Powder 2g
Nutmeg Powder 1g
Salt 15g
Sugar 5g
Black Pepper 2g

Wet Marinade:
Fermented Red Beancurd Paste 1tbsp
Sweet Sauce 1big tsp
Chu Hau Sauce 1big tsp
Oyster Sauce 1tsp
Chinese Yellow Wine 1tsp
Dark Soy Sauce 1tsp
Soy Sauce 1tsp
Sugar 2tsp

Skin Crispy Water:
Chinese Red Vinegar 3tbsp
Rice Vinegar 4tbsp
Chinese Rice Liquor 2tbsp
Maltose 1 big tsp
