材料:
鴨1隻

醃料:
花椒粉2g
八角粉2g
丁香2g
肉桂粉2g
豆蔻粉1g
黑胡椒2g
南乳醬1湯匙
柱侯醬1大茶匙
甜醬1大茶匙
蠔油1茶匙
紹酒1茶匙
老抽1茶匙
生抽1茶匙
糖2茶匙

脆皮水:
浙醋2湯匙
米醋3湯匙
米酒1湯匙
麥芽糖1大茶匙

I made Cantonese BBQ Duck, Salt Crusted Baked Chicken and Char Siew (Cantonese BBQ Pork) before, this time I am going to cook BBQ Pipa Duck.

Ingredients :
Duck 1 piece

Seasoning:
Sichuan Peppercorn Powder 2g
Star Anise Powder 2g
Cloves 2g
Cinnamon Powder 2g
Nutmeg Powder 1g
Black Pepper 2g
Fermented Red Beancurd Paste 1tbsp
Chu Hau Sauce 1big tsp
Sweet Sauce 1big tsp
Oyster Sauce 1tsp
Chinese Yellow Wine 1tsp
Dark Soy Sauce 1tsp
Soy Sauce 1tsp
Sugar 2tsp

Crispy Skin Sauce:
Chinese Red Vinegar 2tbsp
Rice Vinegar 3tbsp
Chinese Rice Liquor 1tbsp
Maltose 1big tsp
