this lasagna is one of the best and easiest i've ever made. the payoff is huge - when you skip all the fiddly layering, it comes together with just one pot and in no time flat. you can sneak in a whole bunch of veg and make it a hearty vegetarian meal, or switch up the meat (i used pork sausage) to change the flavor or suit what you have on hand. and if you don't have fresh herbs don't worry; raid your spice cabinet! this one is a crowd pleaser and oh-so-affordable at less than $5 per serving.

Ingredients (serves 8!!)
• 1T neutral oil
• 1 pound sausage - $4.29
• 1 white or yellow onion - $.79
• 1 package mushrooms, sliced - $1.99
• 3 medium zucchini - $1.99 (can use other veggies of your choice! I’m including zukes because they are overrunning my garden)
• 1 bunch spinach – 2.49
• 2, 28oz cans tomatoes (I used diced and whole) - $1.99x2
• 12oz wavy edge lasagna noodles - $1.29
• 1 bunch basil – $2.29
• 1 bunch parsley - $1.89
• 3 garlic cloves, minced - $.70
• 1C shredded mozz cheese - $4.69
• 8oz ricotta - $4.39
• 2 lemons, zested & juiced - $1.78
• Salt & pepper

$4.41 / serving ($35.29 total for 8 servings)

Method:
1. Brown protein in a large, oven safe pot over medium heat.
2. Dice onion. Add to protein.
3. Slice mushrooms, grate zukes. Add to the onion / sausage mixture. Cook until sausage is cooked through and veggies have reduced in volume and sweated out. If necessary, add 1tsp salt to get mushrooms to release their juice.
4. Stir in garlic and all but 1T of herbs. Taste for seasoning and add S&P if necessary.
5. Add tomato products plus enough water to have about 3C water in your pot. Bring to a boil.
6. Add 12-16oz broken wavy lasagna noodles. Cook, stirring often, until the noodles are al dente. If necessary add more water if your pot looks dry.
7. While noodles cook, combine ricotta, S&P and the zest and juice of 2 lemons. Set aside.
7. When noodles are cooked. stir spinach into noodles and sauce until it's wilted.
8. Stir in 1/2-3/4 of the ricotta mixture, leaving some to dollop on top.
9. Dollop remaining ricotta mixture on top of lasagna, and cover with mozzarella cheese.
10. Broil until the cheese is melted and browning.
11. Top with remaining herbs and serve.
