BBQ season is finally here and I'll be showing you how to make scrumptious Vietnamese BBQ pork sausages!

📍Ingredients:

For the Pork Sausage
1/2 lbs ground pork (regular)
1/2 shallot (roughly chopped)
2 slices of pork side / pork belly (0.15 kg)
2 Tbsp fish sauce
1 Tbsp sugar
1 tsp garlic powder
1 tsp chicken bouillon
1/2 tsp baking powder
1 Tbsp cornstarch
1 Tbsp neutral oil
1 Tbsp annato seed oil for colour (optional)

Pickled Carrots & Daikon
1-2 carrots
1 white raddish / daikon
For the brine:
1 Cup warm water
1 Cup sugar
1 Cup distilled vinegar
2 tsp salt

Dipping Fish Sauce (Nuoc Cham)
1 Cup hot water
1/2 Cup sugar
1/2 Cup lime juice or vinegar
1/4 Cup fish sauce
2 cloves garlic (minced)
1-2 Thai chili peppers (minced)

For the Mango Peanut Sauce
1 sliced mango
1 inch knob of ginger
1 Cup cilantro
2 Tbsp peanut butter
1 tsp sambal chili sauce
1 tsp honey
1/2 lime juice (1 - 1.5 Tbsp)
1 tsp fish sauce

Assemble Vermicelli Bowl with Sausage (Bun Nem Nuong)
vermicelli noodles
lettuce
pickled carrots & daikon
cucumber
mint leaves
crushed peanuts

Assemble Sausage Fresh Rolls (Nem Nuong Cuon)
rice paper
vermicelli noodles
pickled carrots and daikon
lettuce
mint leaves
cucumber
fried shallots
