Hyderabadi Malai Paya is a famous Hyderabadi Recipe made using Lamb Trotters and cooked along with a paste of roasted nuts.

METHOD

1.Lamb trotters - 6
Wash them well and add them to a pressure cooker along with
Turmeric powder - 1 teaspoon
Salt - 1 teaspoon
Ginger garlic paste - 1 teaspoon
Water - 1cup
Now cook till the trotters turn 90% tender

2.In another pan heat clarified butter - 2 teaspoon
To it add
Sliced onions - 1 medium sized
Cashew nuts - 40 gram
Almonds peeled - 40 gram
Pistachios peeled - 20 gram
Diced green chilies -5
Saute them and grind them along with 100 gram yogurt
Grind into a fine paste

3.In another pan add clarified butter - 2 tablespoon
To it add
Caraway seeds - 1/2 teaspoon
Cardamom - 3
Cinnamon sticks - 2
Cloves - 5
Black peppercorns - 1/2 teaspoon
Saute for few seconds

4.Then add ginger garlic paste - 1 tablespoon
Saute till raw smell disappears

5.Now add the ground paste and saute till raw smell of nuts disappear

6.Now add the cooked trotters and cook for sometime
Then add a cup of water and salt
Cook till trotters turn tender

7.When trotters turn tender then open lid and add
Chopped coriander leaves - few
Fresh cream - 100 gram
Garam masala powder - 1/2 teaspoon
White pepper powder or black pepper powder - 1/2 teaspoon
Mix it and cook under low flame for 5 minutes

8.Hyderabadi malai paya is ready to serve

9.Serve it along with phulka or parota
