CHEESY BROCCOLI BAKE (6 servings, 97 cents per serving)
6oz medium egg noodles
1 - 10oz package frozen chopped broccoli or spinach
1 1/2c cottage cheese
1c dairy sour cream
1/2c grated parmesan cheese
1 beaten egg
1/4c milk
1tsp salt
1/2tsp dried basil
1/2tsp dried thyme
1/4 to 1/2tsp bottled hot pepper sauce
1/2c fine dry bread crumbs
1Tbsp butter, melted

Cook noodles according to package directions; drain well. In saucepan, cook chopped broccoli or spinach in boiling salted water for about 4 minutes or until broccoli or spinach has just separated; drain well, pressing out extra liquid.
In large mixing bowl stir together noodles, broccoli or spinach, cottage cheese, sour cream, parmesan, beaten egg, milk, salt, basil, thyme, and hot pepper sauce. Turn mixture into an ungreased 2qt casserole.
Toss together bread crumbs and melted butter. Sprinkle atop casserole. Bake in 350 oven for about 45 minute or until heated through.


HAMBURGER-RICE SKILLET (6 servings, $1.50 per serving)
1lb ground beef or ground pork
1 medium onion, sliced and separated into rings
1 medium green pepper, coarsely chopped
1 clove garlic, minced
1c medium grain rice
1 - 16oz can tomatoes, cut up
1 - 8oz can tomato sauce
1tsp worcestershire sauce
1/2tsp dried basil, crushed
1 1/2c water
1tsp salt
1/2c shredded American cheese or process cheese spread (optional)

In skillet cook beef or pork, onion, green pepper, and garlic until meat is browned; drain fat. Add rice; cook, stirring constantly for 2 minutes. Add undrained tomatoes, tomato sauce, worcestershire, basil, water, and salt. Bring to boiling; reduce heat. Cover; simmer 25 to 30 minutes or until rice is tender; stir occasionally. Remove cover; sprinkle with cheese, if desired.

HAM AND CHEESE STUFFED POTATOES (6 servings, $1.54 per serving)
6 medium potatoes
1/3c chopped onion
1/3c chopped celery
1/4c butter
1/2c milk
1tsp prepared mustard
1/4tsp salt
1/8tsp garlic powder
Dash pepper
3c diced fully cooked ham or fully cooked smoked pork shoulder
3/4c shredded American cheese or process cheese spread
1/4c fine dry bread crumbs
1Tbsp butter, melted
1/2tsp paprika

Scrub potatoes thoroughly and prick with a fork. Bake in 425 oven for 40 to 60 minutes or until potatoes are tender. Remove potatoes and reduce oven temperature to 350.
Meanwhile, in skillet, cook chopped onion and celery in 2Tbsp of the butter until tender. Set aside.
Halve potatoes lengthwise. Scoop out the insides, leaving 1/4" thick potato shells; mash insides with remaining 2Tbsp of butter. Beat in milk. Add prepared mustard, salt, garlic powder, and pepper; mix well. Stir in diced ham or smoked pork shoulder, shredded cheese, and the onion and garlic mixture. Spoon into potato shells; arrange in a 13x 9 x 2 inch baking pan. Mix fine dry bread crumbs, the 1Tbsp melted butter, and the paprika; sprinkle atop shells. Bake in 350 oven for about 30 minute or until heated through.
