Today I will show you how to reverse sear a Ribeye cap steak. Ribeye cap is the perfect steak. Its that awesome piece of meat that runs on the outside of a Ribeye steak. We start by firing up the Silverbac to 250 dagrees. Once the steak reaches 90 we give it a flip and let it ride to 130. Then take it off the silverback and let it rest for about 10 minutes under foil. Next I have the weber kettle screaming hot to do the final sear. One of the best steak I have ever had.
