Zanzanit shevechi bhaji - dedicated to my bhabi @desai_prachi05 who taught me this. She introduced me to Maharashtrian dishes I had never heard of! Plus, she’s also the reason I was able to marry my husband🥰 I can’t love her more❤️

Ingredients: -
1 tbsp oil
2 Onions, sliced
1/2 cup dried coconut, grated
1/2 inch ginger
6 to 8 cloves of Garlic
3 to 4 red chillies (depends on spiciness)
2 tbsp oil
1/4 tsp turmeric
1 tsp garam masala
1/2 tbsp coriander powder
1 tsp cumin powder
thick sev, as required
coriander leaves, finely chopped

Procedure:
Fry onions, ginger, garlic in little oil till onions turn brown.
Add dried coconut and red chillies and roast some more for few mins.
Grind it into a thick paste with water.
Heat oil and add all masalas as listed above (turmeric, coriander powder, cumin powder and garam masala)
Add the onion coconut paste and stir till it leaves oil on sides.
Add hot water and mix well.
Add thick sev towards the end (5 mins before serving) and coriander leaves.
Serve hot and enjoy!
