Egg Tadka is a flavorful Indian dish made with whole (unpolished) moong or masoor dal, eggs, and a blend of aromatic spices. Known as Dim Torka in Bengal and Dhaba Style Egg Tadka in Punjab, this hearty dish offers a perfect balance of flavors, making it a popular comfort food across regions.

👉Ingredients:
Masoor Dal - 1 cup
Eggs -3-4
Green chillies
Ginger paste/grated
Mustard oil - 2 tsp
Ghee - 1 tsp
Onions -2 
Ginger paste / grated - 1 tsp
Green chillies
Turmeric powder- 1/2 tsp
Cumin powder- 1/2 tsp
Coriander powder- 1/2 tsp
Kashmiri red chili powder - 1/2 tsp
Tomatoes - 1 
Kasuri methi - 1/2 tsp
Salt as per taste
Turmeric powder - 1/2 tsp
Kashmiri Red chilli powder - 1 tsp
Coriander leaves

👉Process:
1.  Soak dal for at least 30 minutes. 
2. Heat mustard oil and ghee on a kadhai, add onion, ginger and chillies, saute for a few minutes. Add all the powdered spices, tomatoes and give it a good mix. Once the masala is ready, add the soaked dal to it and salt as per taste. Cook on high flame for 2-3 minutes and then transfer to a pressure cooker, add kasuri methi and water, cook upto 2-3 whistles. 
3. For the second tadka, heat oil, add onions, ginger, green chilli, tomato, kashmiri red chili (optional, for color), garam masala and saute for a few minutes, and then add eggs and salt. Mix well and cook until the eggs are properly done. Now add the cooked dal to it. Simmer for 2 minutes. Garnish with fresh coriander leaves.
4. Serve hot with chapati or paratha. Enjoy!
