How to make Sticky Toffee Pudding. #howto #dessert #stickytoffeepudding

This is based off of Nigella Lawson's recipe, but I've made a few changes to the method. I've also included a tip for softening butter. It's an all in one method of making the cake and the sauce is easy. You can increase, or decrease the quantity of the sauce and it keeps for months. There are also a few bloopers at the end, so stay tuned!

For the cake:
1 cup plus 2 tblsp flour
2 tsp baking powder
1 tsp baking soda
2 eggs, room temperature
5 tblsp butter, softened (video includes a quick tip!)
7-8 oz of chopped and pitted dates
1/4 c dark muscovado sugar, or dark brown sugar
2 tblsp black treacle, or molasses
200ml hot water

The sauce:
10 tblsp butter
1 1/2 cups of dark muscovado sugar
1 tblsp black treacle
3/4 cup heavy cream

Chop the dates and put into a bowl with the hot water until most of the batter is made. In a large bowl combine the butter and black treacle. Then add the sugar and cream together. Add the eggs one at a time and mix. Add the flour, baking powder, and baking soda. I sift the baking powder and soda because mine tends to have hard lumps. Mix on low speed until combined. Add the dates and the water to the batter and mix again until thickened. You can do this by hand. Pour into a 9"/23cm greased pan and bake at 350°F/180° C for 30-35 minutes.

While the cake it baking make the sauce.
In a large pan add the butter, sugar, and black treacle over medium-low heat. Allow the butter to melt and the sugar to dissolve before adding the heavy cream. Mix until the dark sauce has overtaken the white cream. Let it come to a bubble and remove from the heat. It doesn't need to be cool when you add it to the cake.

When the cake is done test it with a cocktail skewer and then continue to prick holes all over the cake to allow the sauce to seem in. Pour about 1/4 of the sauce over the top of the cake and spread it around evenly. Give it about 20 minutes before you serve the cake.

The sauce will thicken as it sits. The cake and the sauce can be reheated in the microwave.
