My mum shows me her amazing recipe and techniques for cooking the best Ginger & Scallion Fish Slices (姜葱鱼片 ).

INGREDIENT LIST 食谱

300g Fish Slices (Siakap, Seabass, Barramundi) 金目卢鱼片 300克
Egg white 蛋白
Tapioca Starch 2 tablespoons 木薯粉2汤匙
Wheat Flour 2 tablespoons each 面粉2汤匙

Young Ginger 7-8 slices 仔姜 7-8片
1 Shallot 小葱 1 粒
2 Garlic Cloves 蒜头2粒
1 Red Onion 大红葱 1粒
1/2 White/Yellow Onion 白/黄葱 1 粒

SAUCE 酱
1 tablespoon Light Soya Sauce 生抽 1 汤匙
2 tablespoon Abalone Sauce/Oyster Sauce 鲍鱼酱/蚝油 2 汤匙
1/2 tablespoon Sesame Oil 麻油 1/2 汤匙
1/2 teaspoon tapioca starch 木薯粉 1/2 茶匙
1 teaspoon white Pepper Powder 白胡椒粉 1 茶匙
1 1/2 teaspoon Brown Sugar 红糖 1 1/2 茶匙
Salt (to taste) 盐
1/2 teaspoon MSG 味精 1/2 茶匙

GARNISHING 装饰
Dried Chilli 辣椒干
Tomato 红番茄
Green Pepper 灯笼椒
Red Chilli 红辣椒(大)
