Today, we're sharing a simple yet mouthwatering recipe for Dim Dal, a classic Egg Lentil Curry that's perfect for a cozy dinner. This budget-friendly dish is packed with flavors, combining the richness of boiled eggs with the heartiness of masoor dal (red lentils). Follow our step-by-step guide to create this delicious meal that's ideal for serving with roti, porota, or sada bhat.


Ingredients:

4 tbsp cooking oil
¼ tsp turmeric powder
¼ tsp salt
5 boiled eggs
1 bay leaf
2-3 cardamom pods, crushed
2 small cinnamon sticks
¾ cup thinly sliced onion
3 tbsp onion paste
1 tsp garlic paste
1 tsp ginger paste
1 tsp red chili powder
½ tsp turmeric powder
1 tsp coriander powder
2 tsp salt, or to taste
1 large tomato, chopped
1 cup masoor dal (red lentils), soaked for 15 minutes
1½ cups water, plus more as needed
4-5 green chilies
1 tsp roasted cumin powder
Roti, porota, or sada bhat for serving
Instructions:

In a pan, heat 4 tbsp of cooking oil. Add ¼ tsp turmeric and ¼ tsp salt, and mix well.

Add the boiled eggs to the pan and fry them over medium heat until they develop some golden brown spots. Be gentle and patient to ensure even browning. Once done, set the eggs aside.

In the same pan, add the bay leaf, crushed cardamom, cinnamon sticks, and thinly sliced onion. Sauté until the onions are soft and translucent.

Add the onion paste to the pan and fry until it turns light brown. This step is crucial, so take your time and add a splash of water if needed to prevent burning. It should take about 7-8 minutes.

Add the garlic paste and ginger paste, and sauté for 20-30 seconds. Then, add a splash of water, followed by the red chili powder, turmeric powder, coriander powder, and salt. Mix well.

Add the chopped tomato and ¼ cup of water to the pan. Cover and cook on low heat for 3 minutes.

Open the lid and sauté the spices until the oil separates from the mixture. This process is also crucial, so be patient and keep stirring until you see the oil separating.

Add the soaked masoor dal to the pan and mix well. Then, add 1½ cups of water, cover, and cook for 8-10 minutes until the dal is soft.

Add the fried boiled eggs, green chilies, and 1½ cups of hot water to the pan. Sprinkle the roasted cumin powder on top. Cover and cook for another 3-4 minutes.

Serve the Dim Dal with roti, porota, or sada bhat for a delicious and budget-friendly dinner.
