Serene Summer Boat life | Cooking, Bubbles on the Hammock, Garden Gin Cocktail

It's hot outside! In today's slow living, serene, houseboat life video, I make lemongrass tea from scratch, a zucchini ricotta puff pastry, and a Garden Gin Gimlet cocktail with basil, cucumber, and ginger. I took the hammock out to hang on the dock when it cooled down a bit. Perfect summer hygge: living the simple life and enjoying cooking. Hope you enjoy the video!

Zucchini Ricotta Puff pastry:

1 large yellow and green zucchini
1 cup ricotta cheese
juice and zest of 1 lemon
fresh basil and thyme
1 sheet of puff pastry
1 clove garlic
1 egg
1/3 cup parmesan cheese

Peel the zucchini into wide strips and toss with olive oil, salt and pepper.
In a smaller bowl, combine ricotta, lemon zest and juice, and herbs. Score the pastry, leaving an inch around the edge, then spread the ricotta mixture in the square. Layer about half of the zucchini strips, then spread the garlic pieces in a thin layer, and cover with the rest of the zucchini. Brush the edge with an egg wash. Sprinkle parmesan cheese on top. Bake at 425 for 20 minutes.
