Homegrown Fire Cider Recipe

Ingredients:
1/2 cup freshly chopped rosemary, thyme, oregano and/or parsley
1/2 cup chopped peppers (choose the level of heat you prefer, e.g., jalapeños or habaneros)
1 lemon, sliced or diced
1 orange, sliced or diced
1/2 cup or more freshly chopped onions
1/4 cup or more freshly chopped garlic
1/2 cup freshly grated horseradish root
1/2 cup freshly grated ginger root
1/2 cup freshly grated fresh turmeric root or 2 to 4 tablespoons dried
Apple cider vinegar (enough to cover all ingredients in a glass jar)
1/4 cup honey, preferably local
Directions:
1. Prepare Ingredients: Coarsely chop or grate all the fresh ingredients. Measurements need not be precise--use what you have and however much you like. Wear gloves when handling hot peppers.
2. Layer in 1/2 gallon jar: Place all the ingredients except the honey into a clean, wide-mouth jar. Layer them evenly.
3. Cover with Vinegar: Pour apple cider vinegar over the ingredients until they are completely submerged.
4. Seal and Store: Cover the jar with a plastic lid or place parchment paper under a metal lid to prevent corrosion. Shake well.
5. Steep: Let the mixture sit in a dark, cool place for about 3-4 weeks. Shake the jar daily.
6. Strain and Sweeten: After steeping, strain the mixture through a cheesecloth into a clean jar. Add honey to taste and shake well to combine.

Fire Cider Salad Dressing Recipe
Ingredients:
1/4 cup fire cider
1/4 cup extra virgin olive oil
2 tablespoons honey (or to taste)
1 teaspoon Dijon mustard
1/2 teaspoon sea salt
Freshly ground black pepper to taste
Optional: 1 tablespoon fresh lemon juice for added brightness
Instructions:
1. Combine Ingredients: add all ingredients to a pint jar. The mustard helps to emulsify and thicken the dressing.
2. Season: Add the sea salt and a generous amount of freshly ground black pepper. Taste and adjust the seasoning as needed. If you like a bit more tang and freshness, whisk in the optional tablespoon of fresh lemon juice.
3. Emulsify: Shake vigorously until the ingredients are fully emulsified and the dressing has a smooth, consistent texture.
4. Store: Transfer the dressing to a glass jar with a tight-fitting lid. It can be stored in the refrigerator for up to two weeks. Always give it a good shake before using it to re-emulsify the ingredients.
5. Serve: Drizzle over your favorite salads, roasted vegetables, or use it as a marinade for chicken or fish to infuse them with flavor.
