Ingredients -
1st Type Toriya-
Ridge Gourd (तोरई) - 250-300 Gm
Coriander Powder (धनिया पाउडर) - 1.5 Tsp
Turmeric Powder (हल्दी पाउडर) - 1/4 Tsp
Salt (नमक) - 1/4 Tsp
Red Chilli Powder (लाल मिर्च पाउडर) - Some
Ghee (घी) - Some
Cumin Seeds (जीरा) - 1/2 Tsp
2nd Type Toriya -
Ghee (घी) - Some
Cumin Seeds (जीरा) - 1/2 Tsp
Tomato (टमाटर) - 2 Nos.
Ridge Gourd (तोरई) - 300-350 Gm
Coriander Powder (धनिया पाउडर) - Some
Turmeric Powder (हल्दी पाउडर) - Some
Salt (नमक) - Some
Red Chilli Powder (लाल मिर्च पाउडर) - Some
3rd Type Toriya -
Oil (तेल) - 1 Tbsp
Cumin Seeds (जीरा) - 1/2 Tbsp
Onion (प्याज) - 2 Nos.
Tomato (टमाटर) - Some
Ridge Gourd (तोरई) - As Required
Coriander Powder (धनिया पाउडर) - Some
Turmeric Powder (हल्दी पाउडर) - Some
Salt (नमक) - Some
Red Chilli Powder (लाल मिर्च पाउडर) - Some
4th Type Toriya -
Oil (तेल) - 1 Tbsp
Onion (प्याज) - 2 Nos.
Ridge Gourd (तोरई) - As Required
Red Chilli Powder (लाल मिर्च पाउडर) - Some
Turmeric Powder (हल्दी पाउडर) - Some
Coriander Powder (धनिया पाउडर) - Some
Salt (नमक) - Some
Tomato (टमाटर) - Some
Yellow lentil (चना दाल) - As Required
Water (पानी) - 1 Cup
Coriander Leaves (हरा धनिया) - Some
Garam Masala (गरम मसाला) - Some

✍🏻𝐑𝐄𝐂𝐈𝐏𝐄:
𝟏𝐬𝐭 𝐓𝐲𝐩𝐞 𝐁𝐡𝐚𝐫𝐰𝐚𝐧 𝐓𝐨𝐫𝐚𝐢, peel Ridge Gourd and slit them in the middle. Take a bowl, and add Coriander Powder, Turmeric Powder, Salt, and Red Chili Powder. Mix well and fill the masala. Keep the pan for heating, add Ghee, Cumin Seeds, and stuffed Torai. Cover and roast on a slow flame. When the Torai cooks well and dry add some more Masala to it and mix well. Cook for 2 minutes and garnish with Coriander Leaves. Serve with Roti, Paratha, or Rice, and enjoy!
𝟐𝐧𝐝 𝐓𝐲𝐩𝐞 𝐓𝐚𝐦𝐚𝐭𝐚𝐫 𝐓𝐨𝐫𝐚𝐢, keep the heavy bottom pan on the flame, and add Ghee, Cumin Seeds, chopped Tomato, chopped Ridge Gourd/Torai, Salt, Coriander Powder, Red Chili Powder, and Turmeric Powder. Don't stir till the Torai releases the Water. Then stir occasionally, cover half, and cook on a slow flame. At last, add Ghee and garnish with Coriander Leaves, and enjoy!
𝟑𝐫𝐝 𝐓𝐲𝐩𝐞 𝐏𝐲𝐚𝐣 𝐓𝐨𝐫𝐚𝐢, keep the kadai for heating and add Oil, Cumin Seeds, chopped Onion, Torai, Tomato, Salt, Coriander Powder, Red Chili Powder, and Turmeric Powder. Don't stir till the Torai releases the Water. Then stir occasionally, cover half, and cook on a slow flame. Garnish with Coriander Leaves, and enjoy with Rice and Salad.
𝟒𝐭𝐡 𝐓𝐲𝐩𝐞 𝐃𝐚𝐥 𝐓𝐨𝐫𝐚𝐢, soak Chana Dal for 2-3 hours. Heat a cooker, add Oil, chopped Onion, Torai, Salt, Coriander Powder, Red Chili Powder, and Turmeric Powder, and chopped Tomato and cook well. Than add soaked Chana Dal and cook till it release the oil. Then cover the lid and give 2 whistle and cook 5 minute on a slow flame. Then release the pressure, mash with masher, add Garam Masala and Coriander Leaves and enjoy! In this way, 4 type of Torai Sabji will be ready only with 4 masalas.
