Here's a quick and easy recipe for Chutney Powder (Chutney Pudi) that makes a delicious side dish for dosa and idli:
Ingredients:

1/2 cup urad dal (black gram)
1/2 cup chana dal (split chickpeas)
1/2 cup dry coconut
20-25 dried kashmiri red chilies (adjust to your spice preference)
Few(2-3 sprig) curry leaves
1 Large grape size of tamarind
1 Large grape size of jaggery
1 teaspoon salt (adjust to taste)
1-2 teaspoons oil for roasting


Instructions:

Heat a pan or skillet over medium heat and add the urad dal, chana dal. Dry roast these ingredients separately until they turn golden brown, stirring continuously. Be careful not to burn them.
Transfer to a plate.

Dry roast dry coconut until golden brown and remove it to another plate.

To the same pan add tsp of oil and roast the chilies become slightly crisp, remove them from the heat. Add curry leaves to the same pan and roast until crispy and remove it to the same dal plate.

Allow all the roasted ingredients to cool to room temperature.

Transfer the cooled dal mix ingredients into a blender (or a food processor).

Grind them into a coarse powder. You can make it fine or coarse according to your preference.

Now add roasted coconut, salt, tamarind and jaggery. Blend again for few seconds.

Transfer to a wide plate.

Allow the chutney powder to cool completely and then store it in an airtight container.
