Updates (Jan 2022)
Sourdough boule: I see many people getting beautiful loaves with an ear so it is not impossible to achieve. It does require an abundance of testing and tweaking and possibly some tools like baking steel.
Baking tray: Anova sent me a new replacement tray with ridges that stays flat.
Oven light: New software update has enabled lights to be controlled independently.
