To Make Brinjal Curry


Brinjal - 4 Nos

Onion - 1 No.
Curry Leaves
Shallots - 25 Nos
Garlic - 25 Cloves
Tomato - 1 No.

Sambar Powder - 2 Tsp
Water - 2 Cups
Tamarind Puree - 1 Cup
Jaggery - 1 Tsp

Prep Time: 5 mins
Cook Time: 25 mins
Servingss: 4-5

METHOD:

1. Pour oil in a wide kadai. Add mustard seeds, cumin seeds, fennel seeds and saute.
2. Once the mustard seeds start splattering, add red chilli and finely chopped onions for 2-3 mins.
3. Add fresh curry leaves, shallots, garlic cloves for 2 mins.
4. Add finely chopped tomatoes and saute until they are slightly mushy.
5. Add salt, turmeric powder, red chilli powder, coriander powder, sambar powder and mix well.
6. Add 1 cup of water to the gravy and cook until the oil is separated.
7. Then add the tamarind puree, mix well and cook for 2-3 mins.
8. Add water, mix and add brinjal pieces. Cover the kadai with a lid and cook the curry for 10 mins on a medium flame.
9. After 10 mins, check for seasoning and add salt if required. Then add jaggery and mix well.
10. Lastly add curry leaves and cook for 1-2 mins.
11. Turn off the stove and Brinjal Curry is ready to be served hot with some hot rice.

Kuzhambu is a tamarind based loose gravy curry that is very popular in South Indian states like Tamil Nadu, Andhra, Telangana, Kerala and Karnataka. Although it has different names like gojju, pulusu etc in different places. This gravy curry can be made with any number of vegetables/ingredients you like. In this video, you can watch the preparation of made with tender brinjals. This is spicy yet tasty. All the kuzhambus are generally enjoyed with rice but few people also enjoy them with a few flavored rice recipes too.
