To Make Masala Paste

To Make Palak Kofta Curry

Palak Leaves - 1 Bunch
Salt - 1 Tsp
Besan / Gram Flour - 3 Tbsp
Onion - 2 Nos
Masala Paste
Tomato Cashew Puree
Turmeric Powder - 1/4 Tsp
Kashmiri Chilli Powder - 2 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 2 Tsp
Salt - 1 Tsp
Water - 1 1/2 Cups
Sugar - 1 Tsp
Garam Masala - 1 Tsp
Kasuri Methi
Coriander Leaves

Method
Take a bunch of palak leaves, Wash it and chop it nicely.
In a bowl, add the chopped palak leaves, add half tsp of salt and mix well. Let it sit for 10 minutes.
To a mixer jar, add half onion chopped, four cloves of garlic, a piece of ginger roughly chopped, four green chilies and grind coarsely.
To a mixer jar, add four medium sized tomatoes chopped, Fifteen cashewnuts soaked for thirty minutes. Grind it to a nice smooth puree. Transfer it to a bowl and keep aside.
Strain the water released from the palak leaves.
To the strained palak leaves, add one tbsp. of freshly ground mixture, three tbsp. of gram flour and mix well.
Prepare the kofta balls from the mixture.
To a greased plate, place the rolled koftas gently.
Place the plate in a steamer and steam cook it for 5 minutes.
To a wide pan add four tbsp. of oil, add the whole spices and fry them.
Add two onions finely chopped and sauté. Add the remaining ground mixture and mix well.
Add the tomato and cashew puree and allow it to cook for five minutes.
Add quarter tsp of turmeric powder, two tsp of Kashmiri chilli powder, one tsp cumin powder, two tsp coriander powder, one tsp of salt. Mix well and cook for three minutes.
Add one and half cups of water, close the kadai and cook for five minutes.
Give a nice mix and remove the bay leaf. Add one tsp of sugar and one tsp of garam masala powder and mix together.
Add the steamed koftas gently one by one, mix and add half cup of water, close the kadai and let it cook for five minutes.
Finally add crushed kassori methi leaves and finely chopped coriander leaves and gently mix.
Delicious palak kofta curry is ready to be served with some nice and soft chapatis or roti of your choice.
