Chingri Mach Diye Mixed Sabji (Shrimp with Mixed Vegetables) is a flavorful Bengali dish that combines shrimp with a medley of vegetables, creating a wholesome and tasty meal. Here's how you can make it:

Ingredients:

250 grams chingri mach (small shrimp), cleaned and deveined

1 carrot, cut into thin strips

1 potato, cut into small cubes

100 grams cauliflower florets

100 grams green beans, cut into 1-inch pieces

1 capsicum (bell pepper), cut into strips

1 tomato, chopped

2-3 green chilies, slit

1 onion, finely chopped

1 teaspoon ginger paste

1 teaspoon garlic paste

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon garam masala powder

1 bay leaf

1 teaspoon panch phoron (Bengali five-spice mix)

Salt to taste

2-3 tablespoons mustard oil or vegetable oil

Water as needed

Fresh coriander leaves for garnish (optional)


Preparation Steps:

1. Marinate the Shrimp:

Mix the shrimp with a little turmeric and salt. Set aside for 10 minutes.



2. Fry the Shrimp:

Heat 1 tablespoon of mustard oil in a pan.

Fry the marinated shrimp for 2-3 minutes until they turn pink and slightly crispy. Remove and set aside.



3. Prepare the Tempering:

In the same pan, heat 2 tablespoons of mustard oil.

Add panch phoron and the bay leaf. Let them splutter for a few seconds.



4. Sauté the Onion and Spices:

Add the chopped onions and sauté until golden brown.

Add ginger and garlic paste, and sauté for 1-2 minutes until the raw smell disappears.

Add turmeric, cumin, coriander, and red chili powder. Stir well and sauté for another minute, adding a splash of water to prevent the spices from burning.



5. Cook the Vegetables:

Add the cubed potatoes and carrots. Stir-fry for 4-5 minutes on medium heat.

Add the cauliflower, green beans, and capsicum. Mix everything well with the spices.

Add salt and cover the pan. Cook the vegetables on low heat for 8-10 minutes, stirring occasionally.



6. Add the Tomato:

Add the chopped tomato and green chilies to the vegetables.

Stir everything together and cook
