Mete Chorchori is a traditional Bengali dish made with goat liver (mete) cooked with vegetables and spices. It’s a hearty and flavorful dish often served with rice or chapati. Here's a simple recipe to make Mete Chorchori:

Ingredients:

250 grams goat liver (mete), cleaned and cut into small pieces

1 large potato, cubed

1 large brinjal (eggplant), cubed

1 onion, finely chopped

1 tomato, chopped

2-3 green chilies, slit

1 teaspoon ginger paste

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon coriander powder

½ teaspoon red chili powder (optional)

1 teaspoon panch phoron (Bengali five-spice mix)

2 dried red chilies

2-3 tablespoons mustard oil (for authentic flavor) or vegetable oil

Salt to taste

1 teaspoon garam masala powder

Fresh coriander leaves for garnish (optional)


Preparation Steps:

Step 1: Preparing the Goat Liver (Mete)

1. Clean the Goat Liver: Wash the liver thoroughly in cold water. Cut into bite-sized pieces and set aside.


2. Marinate the Liver: Mix the liver with ½ teaspoon of turmeric powder and a little salt. Set aside for 10-15 minutes.



Step 2: Fry the Vegetables

1. Heat Oil: In a pan, heat 2-3 tablespoons of mustard oil until it starts to smoke slightly.


2. Fry the Potatoes: Add the cubed potatoes and fry them until golden brown. Remove and set aside.


3. Fry the Brinjal: In the same oil, add the brinjal (eggplant) pieces and fry them until lightly browned. Remove and set aside.



Step 3: Cooking the Mete Chorchori

1. Tempering:

In the same pan, add more oil if necessary. Add panch phoron and dried red chilies, and let them splutter for a few seconds.



2. Cook the Onions and Spices:

Add the chopped onions and sauté until they turn golden brown.

Add ginger paste, and stir for 1-2 minutes.

Add turmeric, cumin, coriander, and red chili powder. Cook the spices for a minute, adding a splash of water to prevent them from burning.



3. Add the Tomato:

Add the chopped tomato and cook until the tomato softens and blends with the spices.



4. Cook the Goat Liver:

Add the marinated liver pieces to the pan. Stir well to coat the liver with the spices.

Cook the liver on medium heat for about 5-7 minutes, stirring occasionally. The liver should begin to release its juices and turn slightly brown.



5. Add the Vegetables:

Add the fried potatoes and brinjal to the liver mixture. Stir everything together.

Add salt to taste and about ½ cup of water. Cover the pan and cook on low heat for 10-12 minutes, or until the liver is cooked through and the vegetables are tender.



6. Finishing Touch:

Once the liver and vegetables are cooked, sprinkle garam masala on top.

Stir and let the dish cook for another 2-3 minutes.



7. Garnish:

Garnish with fresh coriander leaves, if desired.




Serve:

Serve Mete Chorchori hot with steamed rice or chapati for a hearty meal. This dish is rich in flavor with the unique combination of tender liver and vegetables. Enjoy!
