Ingredients
For the Puris and Filling

10-12 ready-made puris (puffed, crispy hollow puris)
1 cup boiled and mashed potatoes
1/2 cup boiled chickpeas or moong sprouts
For the Yogurt

1.5 cups yogurt (curd), whisked until smooth
1/2 tsp sugar (optional)
Chutneys

3-4 tbsp tamarind chutney
3-4 tbsp green chutney (mint-coriander chutney)
Toppings

1/4 cup finely chopped onions (optional)
1/4 cup finely chopped tomatoes (optional)
1/2 cup sev (thin gram flour noodles)
1-2 tbsp chopped fresh coriander leaves
Spices

1/2 tsp chaat masala
1/2 tsp roasted cumin powder
1/4 tsp red chili powder
Salt to taste
Steps
Prepare the Puris
Gently make a small hole on the top of each puri to create space for the filling.

Add the Filling
Stuff each puri with mashed potatoes and boiled chickpeas or sprouts.

Add Yogurt
Pour 1-2 tbsp of whisked yogurt into each puri, ensuring they are filled evenly.

Add Chutneys
Drizzle tamarind chutney and green chutney over the yogurt-filled puris as per your taste.

Season
Sprinkle chaat masala, roasted cumin powder, red chili powder, and a pinch of salt over the puris.

Garnish
Top with chopped onions, tomatoes, a generous amount of sev, and fresh coriander leaves.

Serve Immediately
