Start by soaking red lentil (masoor dal) for 1-2 hours. Transfer to a pressure cooker, add a little salt, oil & water & cook up to 1 whistle, turn off the flame & allow the pressure to release on its own. Once ready, mash the lentil & cook with ginger, garlic, green chillies. Enhance the the flavour with a few spices. Add some roasted chickpea flour (besan) to make the mixture well-combined.

Next step is to shape the kebabs around skewers. Remember to stick the mixture tightly on skewers otherwise you won’t be able to grill kebabs over the flame. Finally grill the seekh kebabs uniformly from all sides til golden & crispy. Before serving, sprinkle chaat masala & lemon juice, these would enhance the flavour of these protein-packed kebabs. Serve with green chutney & ring onion salad and watch them disappear.
