Kabuli pilaf is a Sweet and Savory Beef Pulao, a delightful combination of tender beef, aromatic spices, sweet sultanas (kishmish), and carrots, creating a perfect balance of flavors. It’s a must try recipe for rice lovers. Please try it and let us know in the comments.

Ingredients
Oil: ½ cup (plus extra for garnish)
Rice: 700g
Beef (boneless or with bones): 1kg
Onion: 1 large, finely chopped
Carrots: 3-4, julienned
Sultanas (Kishmish):* 200g
Garlic paste: 1 teaspoon
Garam masala powder: 1 teaspoon
White cumin (zeera): 1 teaspoon
Shahi zeera: 1 teaspoon
Salt: to taste
Sugar: 1 teaspoon

Cooking Method

1. Prepare the Beef
1. Heat ½ cup oil in a large pot.
2. Add the chopped onion and fry until golden brown.
3. Add the beef and cook on high heat until browned.
4. Stir in 1 teaspoon garlic paste and cook for 1-2 minutes.
5. Add garam masala powder, white zeera, shahi zeera, and salt to taste. Mix well.
6. Pour in 2 liters of water, cover, and cook on medium heat until the beef is tender.

2. Cook the Rice
1. Wash and soak the rice for 20 minutes while the beef is cooking.
2. Once the beef is tender, strain the broth (yakhni) and set the beef aside.
3. Measure the broth and ensure it is double the amount of rice (e.g., 1400ml for 700g rice). Add water if necessary.
4. Bring the broth to a boil, add the soaked rice, and cook until the water is absorbed and the rice is tender.

3. Prepare the Garnish
1. In a separate pan, heat 2 tablespoons oil.
2. Add the julienned carrots and sauté for 2-3 minutes until slightly softened.
3. Add the sultanas and 1 teaspoon sugar, and cook for another minute.

4. Assemble the Pulao
1. Gently mix the cooked beef into the rice.
2. Layer the carrot and sultana mixture on top as a garnish.
3. Cover the pot and let the pulao steam on low heat for 5-7 minutes.

5. Serve
Serve hot with yogurt raita or a fresh salad for a complete meal.
