➡️ Steps :-
▫️For Paneer Marination :-
1. In a bowl add ½ cup Curd, 2 tsp Ginger Garlic paste, ¼ tsp Turmeric powder, 1 tsp Red chilli powder, ½ tsp Garam masala, 1 tsp Salt. Whisk well
2. Add in chopped Mint leaves, coriander leaves, 3 slit green chilli, 200 gram Paneer cubes
3. Mix them all well and rest for 1 hour

▫️For BIRYANI RICE
4. Wash 2 cup of Basmati rice and soak in clean water for half an hour
5. Meanwhile boil 8 cup of water
6. When water comes to boil add 2 tbsp Salt. You have to make it a salty water
7. Add 1 Bay leaf, 1 inch Cinnamon, 4 green Cardamom, 1 Mace, 4 Clove, 1 star anise, 2 slit green Chilli, 2 lemon slice in hot water
8. Add washed Basmati rice and cook for 5-7 min
9. Once rice is 80% cooked strain and spread it on a flat utensil.

▫️For Paneer cooking
10. In a pan heat oil and fry 4 slice Onion on high flame for 5 min
11. Lower the flame and cook until onion turns nice golden brown in colour
12. Remove and keep aside
13. In the same pan crackle ½ tsp Shahjeera, add 2 cardamom, one small Cinnamon, Mace, 1 star anise
14. Add marinated Paneer and gently flip and cook until paneer is fried
15. Remove the paneer from gravy
16. In the leftover gravy add 2 puréed tomato and cook for 5-7 min
17. Add in ¼ cup Curd and mix until oil separates
18. Now add some fried Onion, 1 tsp Biryani masala, 1 tsp Kasuri Methi, Saffron milk (soaked 10 saffron strands in ¼ cup milk). Mix them well
19. Add ½ cup water and bring to boil
20. Add 3-4 drops of Kewra water
21. Jhol is ready

▫️ For BIRYANI LAYERING
22. Add half cooked rice in bottom of Kadhai, evenly spread the rice
23. Top with all the Paneer cubes all over the rice
24. Top with 1 tbsp Ghee, handful chopped Mint leaves, coriander leaves, fried Onion
25. Spread jhol all over the rice
26. Repeat the same layer as above, Rice - mint - coriander - fried onion - Ghee
27. Add ½ cup rice water
28. Seal the kadhai using an aluminium foil
29. Cook on low flame for 15 min
30. Paneer Dum Biryani is ready. Serve with raita and Enjoy!!
