How to make meringue foam which can be used in cocktails like the key lime pie cocktail.

Recipe:
5 egg whites
75g sugar
5ml lemon juice
pinch of salt

Preparation:
1. Crack 5 eggs into a casserole dish then add 75g of sugar.
2. Keep stirring until all the sugar is dissolved
, then add 5ml of lemon juice and add a pinch of salt.
3. Give it a quick stir then put in the oven for 30 minutes at 75 ° C.
4. After 30 minutes take it out and place the dish into icy water to cool it down.
5. When it has cooled down, lightly whip the foam using an electric whisk.
6. Pour into a jug, then pour into your cream whipper.
7. Put the lid on the whipper and insert two cream chargers. Give the cream whipper a good shake then put in the fridge for later use.
8. After 6 hours chilled the meringue foam is ready to use.

ISI chargers are compatible with this cream dispenser on a side note.
