Hey family!!! In today's What's For Dinner we're making two Quick and Easy One Pan Summer Dinner!! Or, anytime dinners really, but it's summertime so..... Here ya go! LOL! 🤣🌞💕

Chicken & Zucchini Casserole Recipe:

Ingredients
1 small rotisserie chicken (pulled & shredded)
3 medium sized zucchinis (diced)
1 (6oz) box Stove Top chicken stuffing mix
1/2 cup butter (melted)
1 (10oz) can cream chicken soup
1/2 cup sour cream
Instructions
Preheat your oven to 350 degrees and grease a 9x13 baking dish.

In a large bowl, melt the butter and then mix with the box of dry stuffing mix; set aside HALF of the mixture for topping the casserole later.

Add the pulled chicken, diced zucchini, cream of chicken soup and sour cream to the stuffing and mix well.

Spread the mixture into your baking dish and then evenly sprinkle the top with your reserved stuffing mixture.

Bake, uncovered, in the middle rack for 35-45 minutes or until it's warmed through and the top is golden brown.

Mexican Street Corn Chicken

INGREDIENTS
NOTE: I made extra, but this is the original recipe.

2 lbs boneless, skinless chicken
3 cups sweet corn (2 cans, drained) or Frozen corn, thawed
1/4 cup mayonnaise
1/4 cup sour cream
1/2 tbsp lime juice
1½ tsp chili powder
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp cayenne pepper (optional)
Topping (NOTE: We skipped the queso fresco.)
1/4 cup queso fresco crumbled
1/4 cup cilantro chopped

INSTRUCTIONS
In a large bowl, combine the sweet corn, mayonnaise, sour cream, lime juice, and chili powder and mix to combine.
In a casserole dish, lay the chicken flat in the dish. Then season with salt, garlic powder and cayenne pepper. Spread the corn mixture evenly over the top of the chicken.
Bake at 350˚F, uncovered, for 30-40 minutes or until the chicken is cooked through. Then remove from the oven and garnish the top with crumbled queso fresco and chopped cilantro.
