Cooking Up a Storm: Colcannon and Guinness Irish Stew

Recipe
Guinness Irish Stew

2 Tablespoons Olive Oil
1 Onion, diced
1.5 pounds Stew meat
½ Teaspoon each of salt and pepper
1 ½ Teaspoons minced garlic
32 oz Beef Stock or Broth
12.8 oz Guinness Stout
2 Bay leaves
3 tablespoons of tomato paste
1 Tablespoon of Worcestershire Sauce
2 large carrots, peeled and chopped
3 Celery Stalks, peeled and chopped
3 Tablespoons of Cornstarch and cold water to make a slurry

Colcannon

3 pound bag of Yukon Gold Potatoes
Cream, whole milk and melted butter as needed
1 bunch of scallions
1 head of cabbage, chopped
½ pound of bacon

Sloppy Joes

1 tablespoon of extra virgin olive oil

1 ¼ pounds ground beef sirloin
¼ cup of brown sugar
1 tablespoon steak seasoning
1 medium onion, chopped
1 red bell pepper, chopped
1 tablespoon of red wine vinegar
1 Tablespoon of Worcestershire Sauce
2 cups of tomato sauce
2 tablespoons tomato paste
Crusty rolls
