Here’s a recipe for Masala Bhare Baingan (Stuffed Eggplant):

Ingredients:

4 small brinjals (eggplants)

2 tablespoons oil

1 teaspoon cumin seeds

1 onion, finely chopped

2-3 green chilies, chopped

1 teaspoon ginger-garlic paste

2 tomatoes, finely chopped

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

Salt, to taste

Instructions:

Prepare the Baingan:

Wash the brinjals and make two vertical slits on each, keeping the stems intact. This will help to stuff the masala.

Make the Stuffing:

Heat oil in a pan. Add cumin seeds and let them splutter.

Add chopped onions and sauté until golden brown.

Stir in green chilies and ginger-garlic paste; cook for a minute.

Add chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.

If using, mix in grated coconut and cook for another 2 minutes. Remove from heat and stir in chopped coriander leaves.

Stuff the Brinjals:

Carefully stuff the prepared masala into each brinjal.

Cook the Stuffed Baingan:

In the same pan, add a little more oil if needed. Place the stuffed brinjals in the pan.

Cover and cook on low heat, turning occasionally, until the brinjals are tender (about 15-20 minutes).
