What does White Pinot Noir taste like?
In this new episode of Taste Wine with a Sensory Scientist, I compare my unbiased and blind wine tasting evaluation with what the bottle back label and the store label told me I should taste.
Yes, you can guess it will be different.
Let’s dive in.

Have you had the chance to taste white Pinot Noir before? I never had a still wine made of white Pinot Noir. Like me, you may know of sparkling wines made with Blanc de Noirs, which are made solely with the white juice of Pinot Noir.

🍷 I grabbed this bottle at my favorite wine store for affordable quality wines, Costco, and I was curious to taste it. It’s a White Pinot Noir from Willamette Valley Vineyards, a 2021 vintage, priced at $23.99 at Costco. I haven’t read anything about it, besides the front label and the price.

📝 I then compared my wine tasting notes with the winery owner’s description featured on the back label and the Costco shelf-talker.

1⃣ My first assessment revealed only two wine aromas: almond and yeasty/toasted bread. There was some acidity, and I searched for more aromas to come.

2⃣ My second assessment revealed a different flavor profile when the wine was warmer. And it was certainly different from the description highlighted on the shelf talker.

Reflecting on this experience, not I was not surprised that I didn't detect many wine aromas. The flavors we get from sparkling wines and champagnes made of 100% Pinot Noir juice come mainly from the “elevage sur lies”, the aging on lees during the second fermentation.

Those toasted notes, brioche, spices, and jammy fruits are not derived from the grape variety.
