Warm up with this authentic homemade beef pho recipe! This rich and fragrant Vietnamese soup is slow-simmered to perfection with toasted spices, charred aromatics, and tender beef. Perfect for cozy days when you want to bring restaurant-quality pho into your home.
Ingredients:
4 lbs beef bones (neck bones, marrow bones, etc.)
1 large piece of beef brisket tip
2 large onions (charred)
2 large pieces of ginger (charred and halved)
1 cinnamon stick
1/3 cup coriander seeds
6 star anise
5 cloves
1 tbsp fennel seeds
2 black cardamom pods
3 large rock sugar pieces
1-2 tbsp salt
Fish sauce to taste
For serving:
Rice noodles (cooked according to package instructions)
Thinly sliced beef tenderloin
Thinly sliced onions
Green onions, cilantro
Sriracha and hoisin sauce
Instructions:
Parboil the bones: Add the bones to a large pot, cover with water, and boil for 15 minutes to remove impurities. Drain and rinse the bones.
Toast the spices: In a skillet, slowly toast 1 cinnamon stick, 1/3 cup coriander seeds, 6 star anise, 5 cloves, 1 tbsp fennel seeds, and 2 black cardamom pods on low heat for 10-15 minutes. Be careful not to burn them!
Char aromatics: Over open flames, char 2 large onions and 2 large pieces of ginger split in half until blackened.
Simmer the broth: In a clean large pot, add the cleaned bones, fresh water, charred onions and ginger, toasted spices (wrapped in a coffee filter), beef brisket tip, salt, cinnamon stick, and rock sugar. Simmer for 4 hours. Remove the brisket, spice bag, and cinnamon stick, and continue simmering the broth for another 8 hours or overnight.
Season the broth: In the morning, adjust the broth with fish sauce, rock sugar, and salt to taste.
Assemble the pho: Place cooked rice noodles in a bowl, top with thinly sliced beef, onions, green onions, and cilantro. Pour the hot broth over the toppings to cook the beef instantly.
Garnish: Finish with sriracha and hoisin sauce, and enjoy!
