Here's a recipe from the beautiful beaches of sunny Baja California Norte , a staple of tex mex, or I don't know if it would be considered Cali-Mex?

You will need:
500 gr white fish (tilapia, hake)
1 cup flour
1 cup beer
Paprika, salt, pepper and onion powder to taste
1 cup canola oil

For pico de gallo:
1 tomato
1 small onion
1 head of cilantro
1 serrano chili pepper

For chipotle ranch
2 tablepsoon yogurt (or sour cream)
2 tablespoon mayonaisse
1 tablespoon chipotle

For serving:
Cabbage
Limes
Corn Tortillas
Avocado

Mix flour and beer until lumps are smoothed out then add seasoning (salt, pepper, paprika, garlic powder)

Cut up your fix in thumb sized filets and put in batter, make sure batter is covering all your fish
Heat your oil until bubbles appear if you put a chopstick in the oil
Deep fry your fix for about 5 minutes or until golden brown

For pico de gallo, chop everything finely and mix well, add salt as needed

For ranch, mix together, add as much chipotle as you feel

For tortillas, I heated in the microwave, you do this by wrapping them in a towel and heating them for about 10 seconds

Assemble tacos as: tortilla, ranch, fish, pico de gallo, avocado, cabbage and fresh lime
