It's fallllllll so we're here with a very fall dish
Let's make gnocchi !
Let's make brown butter !

Unfortunately this is a very "play it bey ear" recipe because of how potato is but, it pretty obvious when it's ready so I recommend trying it!!!

Cool thing about this is that it is 2 recipes so you can choose which one to follow!

For gnocchi:
3 large potatoes
1 cup of flour and 1/2 cup more or less while kneading
Salt (about a tablespoon)***
***in the video I forgot the salt but the salt should be added when making the dough

Peel your potatoes and cut into cubes, add into a pot with cold water then boil for 40-50 minutes or until you can pass your fork through the potato. Add flour to the potat0 1/4 cup at a time and knead thoroughly, add salt while you add flour. Knead and add flour until the dough is not sticking to your hands anf can easily turn into a ball.
Once it is turned into a ball cut up into 4 pieces, create" worms" by pressing down, like play-doh snakes. Cut unto 1 inch/2.5 cm pieces
Make sure pieces are properly covered in flour.

Bring water to boil, add gnocchi, mix frequently, when floating remove from water.

For sauce:
1/3 cup butter
1 tablespoon sage
Parmesan cheese to taste
Pepper to taste
Salt to taste

Add butter to pot/pan in low heat and wait until it bubbles, once it start bubbling add the sage, cook it as low as possible and remove when brown and when a small sediment can be found at the bottom, remove from heat.

In the same pot ass about a tablespoon of olive oil. Into the pot add the cooked gnocchi and move around so the down stick. Remove from heat.

Into the pan / pot add the sage brown butter, freshly grated parmesan cheese and fresh pepper and salt to taste!

Mix well, serve, add more cheese and pepper and enjoy!!!
