👩🏼‍🍳 PIZZA DOUGH RECIPE (Makes 6 x 260g Dough Balls)
• 00 Flour - 900g (100%)
• Tepid Water - 615g (68%)
• Fine Sea Salt - 27g (3%)
• Olive Oil - 14g (1.5%)
•Fresh Yeast - 4g (0.4%)

🥣 PIZZA DOUGH METHOD
1. Combine Ingredients
2. Mix until in one smooth dough ball
3. Knead for 5-10 minutes
4. Proof in an airtight oiled tub, Room Temp for 3 hour
5. Measure out 6 equal balls (260g each) and shape into balls
6. Proof for a further 48 hours in the fridge
7. Remove dough from fridge and bring to room temp (2 hours)
8. Bake on wood fired oven at 450c (850f) for 60 - 90 seconds
