Ingredients for Rajasthani Safed Maas Curry:

(Tsp-Teaspoon; Tbsp-Tablespoon)

- Mutton - 500 gms (curry cut with fat and bones)

For Marination:
- Ginger garlic paste- 2 tsp
- Whisked curd/yogurt- 5 tbsp (100 gms)
- White Pepper Powder- 1 tsp
- Salt- 1.25 tsp

White Nuts paste:
- Khuskhus (poppy seeds)-1 tsp
- Desiccated coconut, grated- 1 tbsp
- Soaked and peeled almonds- 12
- Soaked cashew nuts- 10

Tempering:
- Green Cardamom- 3-4
- Black Cardamom-2
- Cloves-4
- Cinnamon- 2 pieces
- Red Chillies- 5-6

Other Ingredients:
- Onions, sliced- 2 medium (150 gms)
- Ghee- 4 tbsp

Preparation:

- Marinate the mutton with all the ingredients and set aside in the refrigerator for 2-3 hrs.
For the nuts paste:
- Soak the almonds and cashews in warm water and peel the almonds after 30 mins.
- To make the paste, add the poppy seeds, desiccated coconut, peeled almonds and cashews in the grinder after straining the water.
- Coarse grind it till powdery.
- Now add 1/2 cup of the water in which nuts were soaked and blend this into a smooth paste.

Process:

- Heat ghee in a pan and add all the whole spices and the whole red chillies.
- Give a stir and then add the sliced onions.
- Mix and fry on medium heat for 5-6 mins till the onions start turning golden.
- Now add the marinated mutton and sear on high heat for 5 mins. Continue to sear on medium heat for another 5 mins till the mutton is browned and oil separates.
- Now add the nuts paste and mix it well. Fry on medium heat for around 5-6 mins.
- Continue to cook on low heat for another 5-6 mins till the paste is cooked well and oil separates.
- Now add 400 ml water, give a mix and cook covered on low heat for around 60 mins till mutton is tender. Open the lid and stir the meat once every 15 mins checking whether water is sufficient. Add water if required.
- Switch off heat once meat is tender.
