Chicken Laksa Soup!

A spicy and flavorful Singaporean noodle soup made with chicken, laksa spice paste, and rice noodles or egg noodles.

Ingredients:
1. 1 lb boneless, skinless chicken breast or thighs
2. 2 cups chicken broth
3. 1 cup coconut milk
4. 2 tbsp laksa spice paste
5. 1 tsp Red Chilli
6. 1 tsp coriander
7. 1/2 tsp lemon Juice
8. 1/2 tsp Mint Leaves
9. 1/4 tsp salt
10. 1/4 tsp black pepper
11. 200g rice noodles or egg noodles
12. Garnishes: chopped cilantro, scallions, bean sprouts, lime wedges
13. Boil Egg


Instructions:
1. In a large pot, combine chicken broth, coconut milk, laksa spice paste, cumin, coriander, turmeric, cayenne pepper (if using), salt, and pepper.
2. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-15 minutes.
3. Add the chicken to the pot and cook until cooked through, about 5-7 minutes.
4. Cook the rice noodles or egg noodles according to package instructions. Drain and set aside.
5. To assemble the laksa, place some noodles in a bowl, then add sliced chicken and ladle the hot laksa broth over the top.
6. Garnish with chopped cilantro, scallions, bean sprouts, and a squeeze of lime juice.

Laksa Spice Paste:
You can make your own laksa spice paste using a combination of ingredients like chili peppers, garlic, ginger, galangal, lemongrass, and spices. Alternatively, you can use store-bought laksa spice paste.
