Plain Upma | Sooji Upma | Rava Upma
Ingredients
Clarified butter / Ghee - 1 tbsp + 1 tsp
Mustard seeds / Rai - 1/2 tsp
Asafoetida / Hing - A pinch
Split bengal gram / Chana dal - 1 tsp
Split black gram / Urad dal - 1/2 tsp
Green chilli / Hari mirchi - 1 Slited
Curry leaves / Curry patta - A few
Semolina / Sooji - 1 Cup
Salt - As per taste
Sugar - 1/2 tsp
Water - 3 Cups
Lemon juice / Nimbu ka ras - Of 1/2 lemon
Coriander leaves / Hara dhnaiya - For garnishing
tsp = teaspoon
tbsp = tablespoon
Instructions
Heat 1 tbsp of ghee in a pan. Add mustard seeds, asafoetida, chana dal, urad dal, green chilli, curry leaves, and semolina. Mix well. Add salt and sugar. Mix well.
Roast semolina for 2 to 3 minutes on medium flame till the nice aroma begins to rise. Stir it continuously.
Then add water and mix well. Keep stirring continuously till the mixture leaves the pan and holds the shape.
Add 1 tsp of ghee and mix well. Then turn off the flame and add lemon juice. Mix well.
Once done, take it out to a serving plate and garnish it with coriander leaves.
'Plain Upma | Sooji Upma | Rava Upma' is ready to be served.

Leftover Rice Uttapam
Ingredients
Leftover cooked rice / Pake huye chawal - 1/2 Cup
Semolina / Sooji - 1/2 Cup
Curd / Dahi - 1/2 Cup
Salt - As per taste
Oil - As required
Onion / Pyaz - 1 Finely chopped
Green chilli / Hari mirchi - 2 to 3 Finely chopped
Ginger / Adarak - 1 Inch grated
Coriander leaves / Hara dhaniya - A handful
Red chilli powder / Lal mirch powder - As required (optional)
tsp = teaspoon
tbsp = tablespoon
Instructions
Take leftover cooked rice in a bowl. Mash it using a masher. Add semolina and curd. Mix well to prepare medium thick consistency batter. - Let it rest for 10 minutes. Then add salt and mix well.
Meanwhile, Heat a pancake tawa. Add some drops of oil.
Now fill the mold with the prepared batter. Add onion, green chilli, ginger, and coriander leaves to it. Sprinkle red chilli powder on it. Likewise, fill all molds.
Then cover the pan with a lid and cook it on a medium flame for 2 to 3 minutes.
Then flip it and cook it from another side as well. Once cooked, take it out on the serving plate.
'Leftover Rice Uttapam' is ready to be served.
